I adore weddings, families and portraits, but my cat, food and house get a lot of my attention, too! I'm married to my very best friend, and we sing to each other a lot. I'm a mid-century modern home dweller. I'm always working, working, working to be better at life (a never-ending battle!). I get a kick out of simplicity, tea, bright colors, ice cream, cooking, sarcasm and books -- among other things. I love me some good, authentic, giggly love. And I love making people feel lovely in the midst of their good, authentic, giggly love. Recipe: Birthday Spiced Carrot Coconut Cupcakes – With Photos! Yay!

I love to bake.  Like, really love to bake.  Oh, who am I kidding, I really love all cooking, but baking sometimes results in cupcakes and that makes me especially fond of it.  These particular — very Marthaesque — cupcakes I made for my birthday were so. dang. awesome. (and tasty!) I felt I would be remiss if I did not document the process and share it with anyone who might benefit from the recipe.  And if I may be so bold, you will ALL benefit from this recipe.

First, a nod to my friend Rhonda (Caden’s Momma), who baked these for me as a thank you for photographing her son.  It was the first time I’d ever tasted carrot cake and I don’t think I’ll ever be the same again.  She says it counts as a vegetable (CARROTS!  CARROT PUREE!), and I choose to believe her.  And no, the fact that I got a scale as a birthday present has nothing to do with this.  Probably.  Maybe.

Spiced Carrot Coconut Cupcakes

Makes ~32 cupcakes or 1 regular cake

CARROT CAKE
3 cups all-purpose flour
2 ¾ cups granulated sugar
1 tablespoon baking soda
2 teaspoons ground cinnamon
2 teaspoons kosher salt
4 eggs, lightly beaten
1 ½ cups corn oil
2 teaspoons vanilla extract
1 ½ cups grated carrot (about 1 large, or 3 small carrots)
2 jars (4 oz each) carrot puree (baby food)
1 cup shredded sweetened coconut

CREAM CHEESE ICING
3 ½ cups powdered sugar
12 oz cream cheese, room temperature
½ cup (1 stick) unsalted butter, room temperature
2 teaspoons vanilla extract
¼ teaspoon kosher salt

¼ cup shredded sweetened coconut, toasted under a broiler for ~2 minutes, for garnish

Position rack in the center of the oven and preheat to 350 degrees F.  Prepare cupcake tins or spray two 9-inch cake pans with vegetable-oil cooking spray.

TO MAKE THE CUPCAKES:

Sift together the flour, granulated sugar, baking soda, cinnamon, and kosher salt into the bowl of a stand mixer fitted with the paddle attachment.  In a separate bowl, whisk together the eggs, oil, and vanilla and add to the dry ingredients. Beat on low speed for about 1 minute.  Add the grated carrot, carrot puree, and coconut and mix until just incorporated.  Pour the batter into prepared pans (fill cups about 2/3rds full, ~¼ cup of batter per cupcake) and bake until a knife inserted into the center of the cakes come out clean, 20-24 minutes for cupcakes, 40 to 50 minutes for 9-inch cakes.  Do not overcook.  Transfer the pans to a wire rack and let cool completely.

TO MAKE THE ICING:

Sift the powdered sugar into a medium bowl and set aside.  In the bowl of a stand mixer fitted with the paddle attachment, beat together at medium speed the cream cheese, butter, vanilla, and kosher salt, scraping down the sides of the bowl at least once, until the mixture is smooth, with no lumps, 1 to 2 minutes.  Slowly add the powdered sugar and beat until light, fluffy, and well blended, scraping down the sides of the bowl halfway through.

TO ASSEMBLE CUPCAKES:

Fill a gallon-sized plastic bag with icing and twist the top to push icing down into one corner of the bag.  Cut a ¼” hole in the bottom corner and use this makeshift pastry bag to squeeze a swirl of icing on each cooled cupcake.  If the icing is too soft, pop the bag in the freezer for 5 minutes.  Garnish with a sprinkle of toasted coconut.

TO ASSEMBLE A REGULAR OL’ CAKE:

Place 1 cake, flat-side up, on a platter. Spread part of the icing over the top of the cake. Top with the second cake, flat-side up, and spread the remaining icing over the top and sides of the cake. Just before serving, decorate with toasted coconut.

May 2010 Goals

Hello, Spring!

I always look forward to May, but because my birthday is tomorrow, this month hits me harder than any other.  It’s like waking up with the whole month of May right in your face, nose-to-nose screaming, “HEY, IT’S MAY!  I’M HEEEEEERE!  GOOD MORNING!”  And then you realize that May is the FIFTH month, meaning the year is already almost half over.  WHAT?

I’ve been talking with friends and family a lot lately about aging and how the passage of time seems sped up now.  How, as a kid, I fizzed with barely-contained excitement as my birthday inched — Oh, that the minutes could tick by so slowly! — nearer and nearer.  How the difference and distance between ages 9 and 10 could be so very vast.  And yet how (somehow) today I find I have to pause and think hard when someone asks, “How old are you?”  “25?  27?  Wait.  No, have I had that birthday yet?  What month is it?  26?  Yes, 26.  I’m still 26.”  Because I’m pretty sure I turned 26 about 45 minutes ago and the whole last year has not happened yet.  And then I’m forced to wonder how much faster time can get, and pray it’s not much quicker than this because as it stands I’m having a hard time keeping up and drinking it in.

So for my birthday (my 27th birthday; I’ve double-checked), I’m going to slow it down.  I’m going to make carrot cupcakes and go on a picnic and read my book by the water with my Honey in 80-degree weather.  And then I’m going to let May do whatever the heck it wants with me — slowly.  And it should be pretty dang fun.

May Goals (April holdovers in italics):

  • Tweak my portrait session pricing (in a way that is beneficial to my clients!)
  • Celebrate my birthday
  • Likewise, celebrate Honey’s birthday (the big 3-0!)
  • Host my first Photo Party (Sunday, May 30th!)
  • Rework my accounting system to make it cheaper and easier
  • Reorganize my website for a better flow of information
  • I recognize that this is subjective, but: Stay productive every day
  • Finish and order studio album TWO of three (work in progress)
  • Privately journal once a week (This one is kicking my rear)
  • Create the print display I’ve got stuck in my head

Completed April Goals:

  • Put on real, adult clothes at least 4 weekdays/week (Hey, when you work from home, pajama pants are much more inviting) — I dressed myself like a living, functioning adult all but TWO days in April.  Take that, slovenliness!
  • Keep fresh flowers in my house all month! — Discovered that Trader Joe’s is great for this habit.
  • Do my taxes (barf)
  • Visit my family in California
  • Bring back something very secret and important from my trip (Shh!) — For being really bad at keeping my own secrets, I’m doing a REALLY good job with this one.  And this particular part of it actually turned out about 1,000,000,000x better than expected.  Shh!
  • Orchestrate a just-for-me shoot — Technically, I completed this with Micha’s shoot, but it wasn’t what I had in mind when I wrote this goal.  It’s being put on hold until the next time I go back to California (when, hopefully, Mother Nature won’t conspire against me).
  • Do a couple of free kids sessions, just to get my imagination going — See: previous three posts.

Baby Micah | Rocklin, CA | Family

Let’s wrap up Baby Week with this little killer: Micah.

I’ve known Micah’s father for over a decade. (What, Travis?! Seriously?)  We don’t talk often enough, but I count him among my closest friends.  I watched him evolve from a bit of a wayward kid to a confident (though often ridiculous) man.  I was there to congratulate him when he got engaged to and married Hillary, a woman who could honestly not be any more perfect for him — nor he for her.  And last spring I was lucky enough to photograph their first son, Micah, just a few weeks after he was born (a session I should blog someday!).

My skills have grown exponentially since then, and so has Micah!  Since he just celebrated his first birthday a few weeks ago, I thought it would be a great idea to dress him in a suit and drop him in a field.  And so that’s exactly what we did.

Exhibit A:

I processed most of this set a little differently than I normally do.  I felt it fit better with a warmer, more vintage look.  This next photo is a perfect example of what I was going for when I dreamed this up; it’s also tied for one of my most favorite photos E. V. E. R.

That tie I mentioned earlier?  Yeah, this is the other contender.  LOOK AT THOSE EYES!  THOSE CHEEKS!  Does this baby businessman belong on the front of a Gerber package or what?  As Travis said, “Mad Men: The Younger Years.”

This face?  Yeah, he certainly has Hillary’s eyes, but he is most definitely Travis’ son. :p

Micah + Bark Chips = True Love

This is a precious profile.

While packing up at their house before we left for the field, I spotted Hillary’s bistro set in her backyard.  I loved the curlicues and the fact that it was a little weathered, so we scooped up a chair and took it with us.  I will venture to say this was a smart idea.

Classic.

I did nothing to his eyes in this shot, which is pretty amazing.

To keep Micah interested (and from tumbling off this chair in pursuit of more fascinating places), we gave him grass.  And then he did this, and my ovaries did backflips.  (And sorry, Mom, but no.  Still not yet.)

Okay, I lied.  It’s a three-way tie.

Travis and Hillary, thanks for being awesome.  Thanks for making an awesome baby.  And thanks for letting me take some awesome photos of him.  Life is awesome.

Side note: I rented a couple of new lenses to try out for this shoot and ended up using them exclusively.  While I’m not a fan of the lackluster flare they produced, the crispness of the photos, the skin tones, the contrast and the bokeh were unreal.  Looks like I’ll be budgeting for a new lens sooner than expected!  Now, what to sell, what to sell? :)

And now, on with Baby Week!

Next up is the very opinionated Madison!  Momma Jessica is another friend from high school.  In fact, she’s from even further back than that!  She and I were in Girl Scouts together many a year ago when our only dreams were of becoming Juniors and getting into those awesome blue uniforms.  And maybe also of a New Kid on the Block or two.  Maybe.

Now Jessica is all grown up and married with a future Brownie of her own.  This gorgeous little girl had me wrapped around her finger for our entire shoot.  Like her mom  told me: she knows what she wants.  And I’m going to venture a guess that, most of the time, she gets it. :)

Jessica, it was wonderful to see you again and to meet your daughter.  Enjoy your photos!

Baby Caden | Rocklin, CA | Family

This kid.  I mean, man, this kid.

With many apologies to my own mother, let me first say that I’m not a mom.  At least, not yet.  (See, Ma?  There’s still hope!)  I’m still in that stage where being around babies has me in a constant state of amazement at the creation of life.  Their beauty, their curiosity, their full-body laughter — it’s heart-stopping at times.  And sweet Caden was no exception.

Caden’s mom and dad (Hi, Rhonda! Hi, Drew!) are friends of mine from high school.  Rhonda is a model of kindness; Drew is a very genuine character.  Together, they’ve built themselves a wonderful life, and they managed to make one heck of a happy baby, too.  But much to the chagrin of a certain set of grandparents, that happy baby had not yet had any professional photos taken.  So we took care of that last week while I was home for a visit.

And man, this kid! I could not have asked for a better, gigglier subject.  I probably could have asked for a less mobile one, but it’s always fun to mix a photo shoot with a workout.  Did I say “fun?”  I think I meant “exhausting!”

Many thanks to Rhonda and Drew for keeping Caden in endless smiles — and to Drew especially for gobbling like a turkey for a full 10 minutes.  You’re great parents, and you needn’t look further than the following photos of this precious face to know that’s absolutely true.  I hope you love these.  And you’re welcome, Pauline!  :)
